I love this mixing of flavors of this side dish. Great for left overs as well. Feel free to pair with your favorite protein dish.
Ingredients
1 large beet, peeled and chopped into cubes
4 cups chopped Brussels sprouts
3 cups of small potatoes cut in half or big potatoes chopped into cubes
2 finned chopped cloves of garlic
3-4 tablespoons of avocado oil
Salt and pepper to taste
Cooking Instructions
Preheat the oven to 375 F
Place all the ingredients on a sheet pan and toss to combine. Toss the veggies each 10 minute for 30 minutes and ever 5 minutes after that until hitting the 50 min or your cooking desire.
