Roasted Brussels Sprouts, Potatoes and Beets

I love this mixing of flavors of this side dish. Great for left overs as well. Feel free to pair with your favorite protein dish.

Ingredients

  • 1 large beet, peeled and chopped into cubes

  • 4 cups chopped Brussels sprouts

  • 3 cups of small potatoes cut in half or big potatoes chopped into cubes

  • 2 finned chopped cloves of garlic

  • 3-4 tablespoons of avocado oil

  • Salt and pepper to taste


Cooking Instructions

Preheat the oven to 375 F

 

Place all the ingredients on a sheet pan and toss to combine. Toss the veggies each 10 minute for 30 minutes and ever 5 minutes after that until hitting the 50 min or your cooking desire.
