I love making this turkey egg muffin and having for breakfast or snack throughout the day. You can enjoy fresh or also freeze it.
Ingredients
Half cup of onions
1 red bell pepper
2 cups of mushroom
10 oz of turkey
8 eggs
2 cups of spinach
Spices
¼ cumin
¼ chili power
¼ of coriander
Salt to taste
Cooking Instructions
Sauteed the turkey until brown, put aside. On the same pan sautee onions and mushrooms until crispy. Add bell pepper and spinach and put the turkey back on pan, add spices and salt to taste.
Mix the eggs well and add turkey mix. Put in the baking tray. Bake for 20-22 minutes.
